Style: White Semi-Sweet Vermut (aka Vermouth)
Region: Montsant, Priorat
Varietals: White wine of Grenache Blanc base macerated on the skins with 30 + herbs and spices added to the proprietary blend. A secret family recipe!
Pairings: I like Xalar serve chilled straight up. Perfect match as an aperitif, on its own, chilled, or as a complement to cocktails. Anchovies, potato chips, olives, pickled vegetables and cured meats.
Aromatics: Full of nuance, where the notes of bark spices, dried flowers, balsamic and citrus skins predominate. The sum conveys freshness and complexity. Diversity of shifting aromas, such as cinnamon, cloves, anise, citrus, savory, licorice, nutmeg, basil, sage, dill, ginger, rosemary, thyme, chamomile...
About the Producer: Coca i Fitó is a project by brothers Toni and Miquel Coca i Fitó, from Alt Penedès, sons of farmers brought up among vineyards. They started their adventure in the lands of Montsant with their own production of unique, modern wines. Their wines, made from a selection of grapes from different vineyards and with a varied mineral composition, combine the minerality of the terroir with the essence of the Grenache, Carignan, and Syrah. They also take part in other unique projects with other wineries in areas like Empordà, Terra Alta, Ribeira Sacra, and the neighboring Priorat.
