Pairing Idea: Enjoy with a medium rare ribeye with a side of mushrooms. Drink now recommendation, and preferably with friends or family in the same night you open it. Based on our recent bottle we opening it is showing so well. It does need to be enjoyed on the same day/night it is opened as it developed in the best of ways best enjoyed with a ribeye!
Profile: We tasted blueberry syrup, blackcurrant, brown sugar, coffee, salty caramel, molasses, and chocolate aromas. Flavors in the mouth mirror the aromatics with very good intensity. The tannins are strong and intense as well, but have a ripeness and sweetness to them that you only get in vintages like this.
About: This Cab, from famed winemaker Mia Klein, comes from the Dead Fred Vineyard in the Coombsville section of Napa. Fred was the beloved cat of the vineyard owners. He found his resting place in the blue oak grove overlooking the vineyard named in his honor. A special soul, a special place, RIP Fred!
