Pairing Ideas: Alsatian cuisine is a natural fit for pairing ideas. Due to its freshness and gentle bitterness, it’s the perfect companion for salads, tapas, shellfish and grilled fishes, it's a real picnic wine! Even the oh' so difficult to pair asparagus can play with this wine.
Fun Facts: Master wine-maker Sauer and his wife Helga have managed the estate since1979. Daniel Sauer is the next generation of this successful wine-producing family. After a year´s practical experience in California, this graduate oenologist studied for a year in Geisenheim, gathered further experience outside Franconia and, in 2011, was named the "Young Winemaker of the year" by the DLG. He now works as the cellar master of the estate.
The total area under cultivation is 14 hectares, Sauer´s vines grow on shell limestone and Lettenkeuper. The slopes around Eschendorf lie in a bowl which is protected from the wind and blessed by the sun. The conditions are unique.
