PROFILE: A red variety from the Iberian peninsula (Spain and Portugal) that's quickly developing a following for its heady aromatics and potential to age.  Tart cherry, Pomegranate, Blackberry, Licorice, and crushed gravel. 

PAIRING IDEAS: Due to its acidity and structure you'll want to lean towards poultry or fish with richer sauces.  Pork dishes or cured peppery meats (pastrami!).
