Pairing Ideas: Exceptional quality 'cava' can literally go with everything. I like to pair sparkling wine with salty snacks like chips, marinated olives, caviar, or fried chicken. Ribeye steak is also a home run for a simple at-home pairing suggestion. This wine can take you through the entire meal from pre-meal cheers, prep, salad, and onto your main course. The profile in the glass is a pale, subdued, and elegant pink color with clean, pure, and almost crystalline aromas of light citrus, red flowers, white fruit, and a touch of cassis. The clean nose evolves with a smooth, voluminous, and fruity texture, pleasant freshness, and fine bubbles. Driven by a very good balance, with low dosage. Made in the traditional method. Vinification in stainless steel tanks followed by blending and secondary fermentation in the bottle, aged for a minimum of 18 months. Extra Brut. This is also a biodynamic producer, yet it drinks very classically.
