Other facts: The grapes are direct pressed and start fermentation in enamel lined tanks. Two rackings are done to clarify the wine to slow down fermentation. When around 20 grams of residual sugar are left to ferment the wine is bottled with 10 months of elevage sure lattes. Each bottle is disgorged manually.
